The next step was to close the eye and mouth holes again before rearranging the geometry to accommodate for these changes once more. I also ran into the same problem as I did with the cat head; while the ear placement was much more out of place on the cat model, I wasn't satisfied with the placement on the dog head, either. I realised that for both animal head types, I wanted the ear higher up on the head and didn't realise that it was possible until this point in the modelling process, so I went back in and closed the ear hole as well as fixing the geometry that was left behind as a result.
